My wife has an '01 v6 Mustang. I have never been impressed with it's power.
Keep in mind, most of the time, when GM and Ford made v6 Mustangs/Camaros/Firebirds it was to grab a market share that loved the look but was willing to take a lower cost car by sacrificing some of the performance. There are exceptions (as the Ford and Chevy began grabbing attention with 300HP v6 cars, but the bigger models were 500HP).
Bottom line, Ford and Chevy did not put v6's in those cars for bragging rights when they have bigger/badder v8's to brag about (granted, yes, the aftermarket community can help improve even the v6 models).

My friend has a v6 mustang, 2000 I believe, and has a 5speed manual trans. My 03 ss which is N/A and has a cold air intake will run away from him. Also some of the 2000+ years had a 3.9 in it instead. It is the same motor with a longer stroke. And basically the same hp figures. But he is in the process of putting a 3.8 crate motor making 380hp in it tho. So let the hp games begin.
