I've been thinking about this for a while now, but In order for me to make my custom CAI i just need to find the right piping and I have a question about this MAF sensor block. I've seen a couple members with there custom CAI on 3.4's and the 3.8's. My question is, is that, once i have my plan right, and the piping, there's this big MAF block attached to the factory. The custom CAI's that I've seen dont have that on there's. Can you completely remove that and not throw a code? Can you just put some sensors in the new piping and call it a day? The MAF block is the only thing in my way of making it the way I want.

You need the MAF. You don't see it on 3.8's, because their MAF is built into the throttle body instead of being a separate piece.
I don't see why it would be such a stumbling block though- measure the OD of the hose connections on the MAF- and buy all your aftermarket piping that size, then just add the MAF to your piping with some couplers- no big deal.
