what is your mantenence intervals?
mine is oil about 2800-3k miles 15-30 for tranny check and service if needed. same for checking the belt and checking for leaks from hoses. 35k for radiator flush and changing the thermostat. 40k for a break fluid change also 15-30k for power steering check and change. what i mean about check and chang is check if the fluid is dirty and feels grity and change it. with the breack fluid is it is supose to be the original color as if it is just pored in to the resivior clear.
I haven't had our monte much more the 12,000 miles so I haven't done much in the way of maintenance yet. Oil change every 3-4K miles with Valvoline full synthetic and a delco filter. I recently flushed the trannie with Dexron 6 atf. I just changed both drive belts and will be changing the spark plugs and fuel filter in the next few weeks. The plugs will be copper so I'll change them again in 30,000 miles. Coolant was changed when I did the LIM gasket last year. I always look over everything (front end, leaks, ect..) when I have it on my lift doing an oil change.
As far as you question on brake fluid, it doesn't stay clear long so i wouldn't use color to judge when to change it. I personally have never changed brake fluid in anything I've driven and one car I owned it will well over 120K miles. Never had a loss in brake performance or any trouble.

I change my oil with Mobil 1 Full Synthetic, and I generally speaking go by the oil life monitor. Which for me and my driving habbits is about every 8,000 miles.
I change the coolant and the transmission fluid about every 25,000 miles.
Spark Plugs every 50,000 miles.

I'm obviously a lot less attentive than most on this post. Oil/filter every 5,000 with whatever conventional oil is on sale. Tranny/filter every 60,000. Coolant - Dexcool every 5 years. Plugs changed at 150,000. Air/fuel filters - 30,000. Serp Belt - 60,000. Brake fluid - never. Power Steering fluid - never. Car is now over 15 years old, with 200,000 miles. Repairs - LIM, A/C comp, Alternater, water pump.
I don't drive my car much anymore. Every month I take a trip up to vist my parents though. They have a pretty nice garage, so once a month I check all my fluids, filters, tires, everything. Do the work as it is needed.

the reson why every so often i do the break fluid i had my break lines break on me on my silverado. so imo and experence after i tend to do it iff it becomes almost really dark. other then that it is usually rutine for me as check intervalls and if it needs it suner then later ill do it
I floor it 15-65 times a day. Illinois wastes my money on stop lights and that creates pollution as I waste my gas idling at them, stopped (!@#$%^&). So... Hydraulic fluids absorb moisture and our transmissions & differentials use clutches, that burn fluid in normal operation. I change the trans filter & fluid every spring ($50); oil filter (GM PF52) & fluid change (5w and a bottle of GM EOS) every 3-5 months ($60); bleed the brakes till clear fluid flows at every other pad change ($20-30); power steering fluid every 3-4 years ($6), through reservoir with a hand vacuum pump; drain and refill engine coolant every spring, adding purple-ice (yes, it works, 4-7 degrees less, must add tap water) ($35); Bosch Platinum spark plugs every spring ($35); GM plug wires every 2 years ($60); PCV every 3 years ($4); cabin air filter every spring (moldy) ($60); engine air filter is K&N. If I used a supercharger, I would change the oil every spring.
