Are the fans coming on?

Is there any more white smoke from the tailpipe?

Does power seem normal?

Has coolant level dropped?

I went outside and added more water and as I did that I saw it bubble then the coolant level lowered so I continued pouring until it was leveled. Then I ran it without the radiator cap on for a good 10-15 minutes as I watched bubbles form and the water would come out of the radiator about 3 times during the process but it seemed like it was getting the air out. I put the cap on and it went to the first line over the halfway but once I turned the heater on, the temperature went down below the halfway. I ran it like that for a good 5 minutes. Are these good signs that I jus needed to let air out of the system and I'm doing it right?

Also, no white smoke from tailpipes, oil is fine, and the fans do usually come on when it warms up but this time they didn't because the temperature dropped

Yes, those are good signs.
These cars can be a little tricky to get all of the air bled out. You may have to do it a few more times yet, preferably through the bleeder screw on top of the thermostat housing.
The needle on the temp gauge should be straight up without having turn the heater on when all is well.

Sadly I broke half of the bleeder screw yesterday similar to the other screw in the heater hose that started this whole thing lol
