5th Gen ('95-'99): MC 1997 LS starting issue

Dear carlovers,
My Monte Carlo from 1997 LS 3.1 V6 has an issue:
She will start perfectly when the motor is cold but when i go shopping and i return? The motor starts but downgrades quikly to 600RPM and then to 2500RPM before it remains the normal 1000RPM..
However this happened about 5 times, suddenly the engine warning light on the dashboard is on. So there is something wrong.
Does anyone know what's going on?
- starting motorpart?
- the sparks?
- fuel pumps?

That engine warning light is a good place to start. It means the engine's computer has recognized an issue with a particular system and has set a notification about the issue it found. Id start by getting that code (or codes) pulled first. Thatll help guide the next diagnostic steps, but it at least gives you a solid starting point.
