I've heard of failed cats getting very red while the car is running, so when it's acting up and you can safely take a peak under the car, see if it's red.
Another method I've heard to see if the cat is involved, remove the upstream O2 sensor on the rear manifold and go for a drive (this gives the exhaust another outlet). BUT keep in mind, this is ONLY a test!! You can have BIG issues driving around without that O2 sensor where it belongs!
