I looked at the housing holding the thermostat on my 2007 Monte Carlo 5.3 and it looks like it's going to be difficult to get to the bolts on the housing.

Has anyone changed a thermostat on the 5.3 and any suggestions for the best way to get to the bolts?

 

I found a pretty helpful step by step on youtube for the '05. The bottom bolt was the most difficult step in the process. I noticed that the mechanic in the vid was under the impression that he needed to remove that bottom bolt completely, but when he removed the housing there was a slot instead of a bolt hole. I think you may be better off loosening the bottom bolt a couple of turns and see if the housing slips off with the top bolt out. (Top is a hole, bottom is a slot). Good luck.
