I know the 700R4 fits at least some 5.7L's...not sure about all. Our 1989 Chevy Silverado truck has a 5.7L with the 700R4.

the 700r4 definitely bolts to 350s and all the other small block chevys. it came in the camaros, firebirds, impalas, caprices, corvettes, and trucks(and i assume gtos). pretty much all the rwd gm cars from the mid 80s -mid 2000s with exception of the gbodys. they also go by the name 4L60e which is the electronic version. i run a 700 myself, and i dont see you getting a new one with a convertor for a g not to mention youre probably going to have to get a different driveshaft or modify yours depending on what trans is in your car now. while were on that topic whats wrong with your current trans? if its the 200-4r why not build that up? id avoid a stick shift theyre fun and all, but i dont see the point. an auto is just as good and more consistent without being super annoying in bumper to bumper traffic. i could see a stick shift if the car didnt weigh anything and had a motor that had to be spun real hard to get the car moving, but for a big tank cruising on weekends nah.
