Default Holiday Recipies

I didn't see anything like this, so I decided to post :P

Anyone have any delicious recipies for the holidays they would like to share?

Here is my yummy treat:
Baked Apples with Peanutbutter & Caramel
Its a little treat I've been working on for the past few months<3 Money has been tight so I found a yummy treat for my sweet tooth!
makes 8 servings

What you need:
  • 4 Apples, preferably red. Gala & empire are sweeter when cooked.
  • Bagged Caramel cubes (or make your own caramel)
  • Peanut butter (can be chunky or smooth, chunky is better)
  • Sugar or colored sugar crystals
  • whipped cream
  • a 12in by 9in , 2inch deep baking pan
  • aluminum foil

Pre-heat oven to 400-425 degrees
1. Cut each apple in half(horizontally or vertically) and spoon out core to create a bowl shape
2. Inside the bowl of the apple halves, spoon in a glob of peanut butter. Spread even over the surface of the apple
3. Sprinkle sugar or colored sugar crystals over the top until evenly coated(better with more than less!)
4. Place a caramel cube on top of the peanutbutter. Do the rest for the last 6 apple halves
5. Spread evenly in pan, leave at least 1/2 to 3/4 of an inch room for each apple half, and don't forget to line the pan with foil. The syrup they produce is hard to remove.
6. Bake for 25 minutes. Remove pan & cover with foil. Place back in oven at 350 degrees & cook for a additional 10-20 minutes, or until the apple skins 'burst' & when poked it has the consistency of apple sauce.
7. Let cool for 5-10 minutes. & add whipped cream blobs on top (optional)

A good trick to keep the apples together, with foil cover the bottom of the apple & form into a bowl.

Thanks, Jen - I have all the ingredients in the house, I've been sick with the flu for four days and am bored witless. This is just what I needed! Thanks for starting a good holiday thread....

(Two hours later) Jen - sliced them, baked them, ate them - LOVED THEM!!! The foil "cups" around the bottoms really helped. Now here's a favorite recipe of mine :


RUSSIAN TEACAKES

1 cup butter, softened
1/2 cup powdered sugar
1 tsp. vanilla
2 1/4 cups flour
3/4 c. finely chopped nuts
1/4 tsp. salt
powdered sugar for dusting

Mix butter, 1/2 c. powdered sugar and vanilla. Stir in flour, nuts and salt until dough holds together.
Shape into 1-inch *****. Place 1" apart on ungreased cookie sheet. Bake in preheated 400* oven for 10 to 12 minutes until set but not brown.
Roll in powdered sugar while warm. Cool. Roll again.
Makes 4 dozen.

mmmmm that santa's sleigh cocktail looks amazing! If only I had some brandy in my giant collection of liquor ):

to Possum: Glad to know they came out well! Those cakes sound yummy!
