Not sure I am following everything, so I will re-cap what I think I understand.
You are receiving a message "low engine oil level". You don't see any issues according to the oil dipstick, you have an appropriate level of oil. You replaced the oil pan and gasket (which normally that is done if it is leaking or signs of the pan rotting away). The pan has an oil level switch that screws in from the outside the pan. That is the ONLY item that controls that light. Unless I missed it, I did not see anything saying you replaced it (so I am assuming you re-used the one you had). That being said, you either have a bad oil level switch in the pan OR a fault/break in the wiring/connector for the switch.
The car does have an oil pressure sending unit, but that has nothing to do with the "low engine oil level" light you are seeing.
