Default Electric carburetor

I have a 1988 SS & recently swapped out the 305 for a “healthier” 350. While it will run with the original carburetor on it, it does not run real strong. My question is, IF I take the factory carb off & disconnect the TPS & the mixture solenoid connectors, will it still run? Besides the “check engine light” coming on, what else will happen? I want to put on a non-electric Quadra jet for better performance from the 350. Any ideas/thoughts/advice would be greatly appreciated.
Thanks
Tom
