How much to install what???

Those overlays are for the SS cluster only. There are no overlays available for the LS cluster except the Speedhut EL overlays.

So am I correct in saying that only the speedometer needle needs to be removed, and this swap can take place in the car, without removing the entire cluster?

Yes, just the speedo needle needs to be removed

No... not quite. You can't remove the lens without at least partially removing the cluster from the car. Also, the speedo needle and motor are somewhat fragile, so be careful when removing it or you can destroy the motor

I'd suggest removing the cluster entirely... it's only 4 screws (that have to come out to remove the lens) and one connector.
