Consequences of Not using GMOS
I am using a Pioneer aftermarket headunit in a 2003 LS and am using the GMOS to keep all the little nick nacks of the car in running order. The GMOS was sent for free with the stereo I purchased and seems to be cheaply built and more of a cluttered mess then anything else.
The electrical in the car is not the best anymore and all the extra clutter from the adapter having to be there is just annoying. I am also wanting to replace the speakers in the front and rear of the vehicle. I have some 6.5s for the front doors and some 6x9s for the deck in the rear.
I am wondering if anyone knows what the consequences would be from just removing that whole gmos adapter and the factory amp and just running new wires from the headunit to the speakers directly. For now I will be running the speakers from the amp built into the aftermarket stereo. Eventually I will want to put a separate amp just for the rear speakers if this setup will work.
From what I understand I will lose door chimes, seat belt chimes, oil and tire indicators, etc. If this is the case and its just those things but the car would still be safe to drive, then I would rather throw out the adapter and all the old parts for fresh wires and less clutter. Any information on the matter is greatly appreciated.

You loose the chimes thats it.. you still get the heads up display on the dash. It might chime when one pops up normally.. but it wont obviously without the gmos. I havent had the gmos kit for 3 years, Theres nothing wrong with not having it. Most people dont use it cause its pretty expensive.
Also to answer your other question running new speaker wires is never a bad thing. Specially if you plan on upgrading. And the rear speaker take no time at all to run.

I had just a basic LS so I never had the amp. But id imagine the speaker wires go to the amp in the back.. so run 12 gauge or 14 gauge speaker wire back there and then whenever you put a aftermarket amp in, Your already good to go

I had a cheap one that went out and I would blow the 10 amp fuse for the instrument cluster causing the engine to go off at any random time as soon as the fuse blows and my radio fuse kept blowing. Not sure if it was just due to bad adapter but ya. I have a Kenwood double DIN, Rockford Fosgate T1 6.5s and 6x9s and a JL 300/4v2. Not sure if just fully bypassing it would cause the same issues but it wasn't a fun journey trying to get the car from point A to point B
