Default 2004 MC overheating and has low oil pressure

I have a 2004 monte carlo dale earnhardt edition with the supercharger. It has 106000 miles on it. I replaced coolant elbows because it was causing car to overheat and coolant was everywhere on the engine. Now the overheating is back but now when it gets hot the high coolant temp comes on and the low oil pressure light comes on and then the cat stalls out and cuts off. I also hear a ticking, rattle noise, like an empty spray can rattle when it gets hot an accelerate. And it wont crank back until 10 mins

These motors can only stand so much heat....
Im surprised you have blown any of the intake gaskets! or maybe you have and just dont know it yet?

When the last time you did a complete coolant flush? Oh and when its running hot..That "rattle" you hear is called spark knock...

You should never let it get that hot....ever!
I recommend a complete coolant and radiator flush...as well as remove the thermostat and boil it...Then check to see if it opens....If it doesnt...replace it!
Its so hard to diagnoss without seeing it etc.. in person...But this would be the first thing I would do to resolve your over heating issue...IMO

Maybe someone else will chime in...with a better answer...since my Monte isnt super charged...But its a good rule of thumb to flush the system..Especially with those kinda miles on your vehicle....
