Yes, the harness you linked to would work to bypass your factory amp. I don't know for sure that the '01 Impala amp is the same, but since they call for the same harness to bypass it I'd assume (hate doing that) the circuitry is the same and therefore interchangeable.

 

Sorry for the lack of knowledge, but with that bypass harnesss, Am i understanding this correctly that if i buy this and plug the wiring from the amp into it instead of the amp, the sound will then just come out of the speakers without going through the amp? Sorry, I feel dumb, but am clueless when it comes to this...
