I too text and drive. Figure I have been on the road all these years and by now understand my vehicle operating skills enough to know when to not text and when I can safely text. Like others say, cops do it ALL the time, whether on the phone, or computer or texting, talking on the radio, scanning license plates. Figure some 23 year old cop has only about 6 years of driving under his belt and I have over 50. So I just make the call and so far in about 14 years of texting NO wrecks yet...

I keep my phone on the seat behind me. I have bluetooth in both cars in case someone needs to call me.

Nothing in a text message is urgent in my eyes.

Yes, police use their phone, computer, etc. while behind the wheel, exceed the speed limit and may run a red light. That is because they are exempt from those laws if it facilitates enforcement of the law. However, if they are off duty in their personal car they are not exempt and can be issued a citation the same as any other individual. One thing a lot of people don't consider is that police go through extensive driver training courses - something most people on the road don't do. They are better prepared to react (correctly) in order to avoid an accident instead of panicking like most would.
