A thermostat blocks the coolant from entering the engine. Thermostats are set to open at certain temperatures and let the coolant flow. When your engine heats up to the temperature your thermostat is set to open, it opens and lets coolant into the engine to cool it down. The lower the temperature rating on the thermostat, the cooler the engine will run. A cooler engine can increase hp, but the main reason people switch to a lower temp thermostat is to reduce KR on forced induction engines which run hotter. You probably dont NEED a lower temp thermostat, but it will help if you start modding.
