There's a sensor in the radiator that probably went bad, or is just gunked up. That will trip a faulty low coolant light. You need to partially drain the radiator to change it, so when you flush the coolant, that's a good time to do it.
best way to figure that out is to purchase a code reader or go to a shop that will read the code for the simple reason that it's the service engine soon light.. That's such a general light and there are a LOT of things that can trip that.. (in my opinion the most horrible light in any and every vehicle... for that reason) For example.. it used to come on in my 2002 cavalier LS sport when a headlight would go out.. :-/ yeah.. anything and everything lights suck.. see if someone will check whats throwing the code and go from there. lol
It's hard to get a proper reader for the service vehicle soon light. You might have to go to a dealership to get that one read. There is an issue with the BCM for those codes, not the PCM like the check engine light.
I'm losing coolant, I wanna try to get it flushed this weekend, before there is a major problem. I put coolant in radiator and filled the reservoir this past sunday and today the coolant is low in the reservoir, there is no sign of any leaks or anything, my temp gauge moves when I'm riding around the city, but but stays stationary on the interstate. Are there any links concerning cooling? Or anything that I need to check?
If you added coolant and just the overflow is lower than normal that is fine and normal, some gets used up and doesn't come back, just return the level back to where it should be and keep an eye on it. You might not be losing coolant.
However if you are losing coolant, I would suspect the LIM gaskets as it's common. Also keep an eye on your oil and make sure it's not mixing.

Just as an addition to Chibi's post.. sometimes (on rare occasions but it happens) it just leaks directly into the piston chamber and doesn't mix with the oil in a noticeable amount (considering the amount you drive it and the size of the leak).. In this instance keep an eye on the exhaust. Once the vehicle is at normal operating temp see if there's an excessive amount of vapor coming from the exhaust or even a smell from the coolant being burned off in the cat.. it's a weird sweet smell, and should be very noticeable.
If your losing coolant still, you may have a bad water pump gasket or the water pump itself has gone bad. Pop your hood and check under the hood literally, and check for signs of residue from fluid splatter on the under side of the hood. My car has a bad gasket and when it runs the belt flings the coolant on the hood. Never leaks to the ground. Also NEVER use Stop Leak, that stuff clogs up your line and pump quicker than anything. I used it on my old 89' mustang gt on my water pump and locked it up. You need to flush you power steering lines to get that stuff out before you lock up your power steering pump and lose power steering as your driving down the highway...trust me that isn't fun. As far as your Low Coolant light being on, pull the thermostat and clean it. over time Dex-Cool causes horrible gunk build up inside the radiator and throughout the lines. Just last week I pulled out what look like a leaf in my resevoir but was in fact all the gunk from the Dex-Cool. Your thermostat more than likely has gunk build up on it and needs a good cleaning.
