From my experience if you just did a filter and fluid from the pan you will need to add about 7 or 8 quarts of new fluid. But then I have only did this once and about 5 months back, but I believe thats about what I put back into it. You can always take back any extra and get a refund.

If you do a pan drop and filter change, you need to buy 8 quarts. Put 7 in to start, and drive it till it's warmed up. Check the fluid level (while car is running and it's fully warmed up). Chances are, you will need to add about another .5 quarts, for a total of 7.5. That's about where I fall every time, and I've changed my fluid at least half a dozen times.
Also, I would recommend buying the newer Dexron VI fluid.

You're right, its the only fluid recommended for all GM cars that used Dex III. However, you can still buy unlicensed versions of Dex III (which I'm sure are fine, but I would not recommend them just because they aren't licensed).
