Question Fluctuating temp gauage

I have a 95 monte Z34 and i replaced the thermostat because it was stuck open.
I bled the air out of the system from both of the bleeders but my temp gauge still fluctuates by 20 to 30degs? Though it nevers goes further then halfway up the gauge.
Is there still air in the system or might there be another problem that I havent found yet?

Did you accidentally buy a 180 thermostat?

Not sure about the '95, but the 2000-2005 (and possibly the 98-99) come with a 195* t-stat stock, and the fan turn on points are set to 212*(which is halway on the temp guage).
When people switch to a 180* t-stat but don't change the fan settings, you'll see the temp stay right around 180* on the highway when the car is moving, but when you get into traffic it'll jump up to about 212*. When you're not moving, the fans are the only way to push air across the radiator, so it won't cool down more than the fan turn on point. Even with a stock 195* t-stat and stock fan settings you'll still see some fluctuation, especially in cold weather, but it's way more pronounced with a colder thermostat.
