What I'm looking for is either:

A non-NASCAR model kit;
a Sunstar-style diecast; or
the plastic assembled models like the dealers used to sell.

I started collecting the dealer models when I got my Beretta, but it was one of those things that went by the wayside when I had kids. The kids have rown and gone, and I want to get started again.

 

Well I have been collecting die cast for a long time and have a pretty good collection. Most of mine have the #3 on it but every time I get a street version Monte Carlo I snap it up and I have never seen the 7th Gen Monte Carlo, 6th Gen in 1/18, 5th Gens are only a Plastic version fully assembled.
But you never know they may have one out there. Maybe the Jada diecasts you find in Truck stops.
ebay is most likely the best source but they have nothing. Sometimes the Chevy dealers have some versions also.
