6th Gen ('00-'05): Side Exhaust?
I have seen a 5th gen. Monte Carlo with side exhaust and also a early 90's Lumina but in both applications they had to begin after the Catalectic converter. They both had what looked like a homemade conglomeration under the car. So I would say that you may need to have it custom made to keep the flow going smooth.

You can do side exhaust on nearly any car. The downside with a car like the monte is that there isn't a tunnel for the exhaust to go out the side. So in order to get the exhaust out the side, the exhaust needs to turn and drop down out of the normal tunnel to run underneath the floor pan.
The main issue in doing that is ground clearance. You need a little space under the body (so the exhaust isn't sitting on brake/fuel lines), then you add 2-3" of pipe hanging under that. You should be able to hop under your car with a tape measure to see just how low that's going to hang.
They do make oval pipe that would help here (its wider, but shorter to maintain the same cross section but with less height), but most exhaust shops aren't going to stock this and its also limited on the bends and such it can make.
The second issue is how to quiet the exhaust down. There's no way you're going to put a muffler under the floor pan and maintain any reasonable ground clearance. That leaves you to fitting any resonator or muffler system in the tunnel after the cat. That isn't a huge deal since there are plenty of round mufflers that would easily fit in the tunnel, but it just limits your choices.
If you're ok with the reduced ground clearance, any exhaust shop will be able to fab this up for you. It's a super simple setup. It's a lot more fab work for them to build a full cat back having to route around the gas tank, suspension, etc etc.
