Since my car was a dealership demo, the C of A and coverletter don't have anyone's name or address on them.
The cover letter only has the build number and VIN in small letters in the bottom left corner.
Here's a shrunk down version of my cover letter with the VIN and build number photochopped out.

Congratulations on buying the Tony Stewart Monte Carlo.
As for getting copies of the original paperwork for the car. It can be a test doing it.
It took me some eeffort to find out out our '03 Pace car replica when we bought in may of 2008. The original owner misplaced the paperwork for our car. But I finally was able to locate the company that originally printed up the certificates for the signature series and pace cars.
