Default thermostat? temp sensor?

On my 04 SC MC, ive noticed lately the cooling fans arent turning on. I installed a drilled 180 a few months ago an put 2 holes on the thermostat. I was bleeding out my cooling system yesterday and I noticed that when my car hit 185 degrees my fans didnt turn on*my fans are tuned for that setting* anyways my fans turned on at about 200 degrees for like a minute then shut right off...could this be a bad thermostat or a bad temp sensor...there car isnt over heating but it is causing some kr when it gets hot

Did your fans used to work at 185? The tune could be wrong.
