remove the air intake duct to the t/body,
unhook the coolant lines from the t/body,
remove the throttle body,
now there is two 13mm bolts.
the rear one actually has a slot in the therm housing, so you can leave it still in there by a few threads and pull the housing off, and get the t/stat out and put the new one in, put the housing back on and then just tighten that rear bolt. put the other bolt in and put it all back together.

I believe you can also try to remove the crossover for access, but the throttle body is easier

I'm so glad all of this isn't necessary on the 3.8

Good point, does the 3.1 have a bleep screw anywhere? and any specific coolant or just any old 50/50 mixture?

Yea I did one on a 3400 before too. It's a little challenging but you can handle it.
