So I picked up some wheels the other day from a 08-13 impala. The lug pattern is the same however the offset is not. They barley hit my caliper but hit it enough where I cant run them without spacers. What size spacers should I buy? I was thinking 1.25 but I dont want them to really stick out.

I'd set the wheel on there as flush as you can and push until it bumps the caliper. Then just measure the distance remaining from the wheel to the hub, and that'll be your minimum spacer thickness (plus a hair obviously for clearance, but the off the shelf ones come in standard thicknesses so you'd just use the next one up).

Personally, I'd go with as thin of a spacer as you can. You still need to maintain sufficient thread engagement on the lugs. With a 1.25", I can't imagine any of the stud would be sticking past the lug seat.

The spacers I'm looking at that are inch n a quarter are the spacer adapters so it's not just a plate you bolt between wheel and hub. I just dont know if I should go with ones that big

What is the size of the gap you're trying to fill? I would be surprised if it was that different. I put SS wheels on my 5th gen with fairly minimal spacing to clear the calipers. I get wheel design plays into it, I'm just surprised you'd need anything nearly that big.

Or, if the rub is just slight, you could use an angle grinder to lightly reduce the caliper size. Its probably just the outer corner of the caliper that is rubbing and the casting is built up pretty strong out there. Grind 1/16th of an inch off that edge and paint your calipers. Nobody will know. This practice might make some nervous, but I had to do it myself and that was probably 10 problem-free years ago. Just check carefully every time you change the front pads because this pushes that caliper out a little bit
