Honestly, I think you'll get more people telling you black. Simply because there are more people here who own black Montes than white ones.
But I think it's more of a personal taste. What do you like better? It helps if you have a plan as to what you want your car to look like when it's done. Plan ahead. Because once you paint the car and start modding, it's very expensive and time consuming to change your mind.
What's wrong with burgundy? Is it just not your style? Or are you having a tough time coming up with ideas for burgundy?
With black, there's a natural tendency for people to "murder out" the car and make everything black. Windows, tail lights, wheels included. That's great if you like that look. But with black if you want to stripe the car, or have other graphics on the car, a black car can limit your choice of colors. Besides, the black exterior would make your tan interior look even brighter than it really is. I think your tan interior would look better with a white paint job.
I think white exteriors are under-rated. They're literally a blank canvass for anything you want to do. Stripes, vinyl graphics, airbrushing, etc. And you're not limited to certain colors.
If you set up a master plan for the final look of your car, you can make a spectacular car. Even with white. Great examples are MelsSS and Blazed SS with their white/orange themes. But I also think white with black stripes and tinted windows looks great.
Bottom line: Make a master plan of what you really want to do to the car, and what it will ultimately look like. Make one for both colors, black and white. And see which one you like best. :)
