custom interior kit
Your best option would be to paint the pieces that you want to be different. There are a lot of examples of awesome paint work here on the forum. A good thing to keep in mind is that a good adhesion promoter is a must for good results on plastic pieces.
When I paint my interior, I'll be sticking to black/silver/pewter/gray/charcoal type of colors. I've never been a fan of bright flashy interiors, just tends to attract un-desired attention, also, a lot of color can easily make an interior look over-done and no longer classy IMHO. If it's your daily driver, a lime green, bright red, or super glossy dash might not be the most appealing thing to see everyday, but if it's what you like, go for it

I have never seen anything but seatcovers. You might be able to get the actual leather cover right from the dealer. You could also try a custom upholstery shop in your area. If you look for one that does restoration work on classics, they are usually the best at there craft.
I know nothing of seats that would be an upgrade/direct replacement that would remain the same height, width, etc. Best of luck with your search though.
GSI-interiorss.com does them for the 80's monte carlo ss's..does nice work..his prices are in $500 range for the 2 buckets and rear seat...i checked with him..he doesn't do newer monte's yet but said he is thinking of doing them at a later date..found 2 other places but same..don't do the newer stuff..i've used these places before when doing customers cars..theres shops out there that builds the covers to specs..all you do is take old ones off seats[remove hog rings and pull off]and pull new ones over your foam[seats]hog ring them and BANG you have new factory seats again for about 1/4 of what your local shop would charge you to recover them...just most of these places only do on type car only and only do factory stock[exp..mustang or camero or vette and so on]
i build hot rods and show cars unless you want to spend couple thousnand then you can't use local shops..i'm not looking to spend that kind of money..can go to any gm dealership and they can get the factory covers but i'm not looking to put factory back in it..i will keep looking..thought since this was a monte carlo forum then someone would have done this already..

You can use grand prix seats.... 97+... 04 and above will be an inch higher and a little wider, you will need the 04+ seat belt 'clip' on the inside of the seats.
Your best bet is to just get the ones you have now re-upholstered or get a good seat from the yard. You could do different color stitching or leather, there's been a few people that have done custom leather jobs around the site.
