Default 180-Degree Thermostat Selection. Yes or No?

I'm thinking about putting one of these High-Flow 180-Degree Thermostats in my baby Evelyn! Just to keep her and everything else nice and chilled-out for them sunny day with the windows rolled-up and the A-C on and a large Duncan Donuts Iced Coffee getting spilled all over the front of me.

Is this thermostat the right way to go ... or should I be looking elsewhere?

What comes stock in the car? What is important is keeping that motor cool enough to run at its highest efficiency.
