Over heating
I have a 03 monte 3.8 l-36 I start the car it it runs fine after warm up it starts to knock as if there is no oil and when I went to check the oil level the dipstick was too hot to touch so I checked the temp guage and it reads normal why would this engine get hot like that after only running for 5 to 10 min is it possible that there is not enough anti freeze or air trapped in the cooling system.

Pop your engine cover off, open your thermostat bleeder valve and start the car. Get it to the point that coolant is flowing out of it and you'll know it's not air
When was the last time you flushed the coolant?

I would drain everything, and circulate water through your system, drain the water, and repeat with water a few times. Then fill back up with a 50/50
